Most of the big training plan books offer a lot on physiology and racing tactics as well. I actually have not read anything that just looks into the history of it.

Depending on where you live, there is a decent chance your local library has most/all of those.
If you are a serious runner go with Steve Magness’s book. It isn’t for hobby joggers though.
