Your broker closes you out and you profit.
When you sold short, your broker borrowed shares, you sold them in the market, and the funds were in your account, but there was an ofsetting debit for the present value of what you borrowed.
When a company is delisted, the ofsetting debit is closed. You don't actually get any additional profit, but you get to keep everything you obtained by selling the borrowed shares.
