what about calcium consumption...does that hurt iron absorption?? I also heard that vitamin C aids in iron absorption...

correct.
Iron is better absorbed in an acidic environment. Vitamin C (Ascorbic Acid) will help out with the Iron as well as other minerals. Ca and Fe can "compete" for absorbtion. You really shouldnt be too worried about this if you are spreading out each mineral throughout the day and getting an adequate amount of each. If you think it is necessary get most of one in the AM and another in the PM (say Cereal and Friut for Fe and Vit C, then leafy greens, milk, and yogurt with supper).
from my own experiance caffeine in small controlled doses helps. Ive had 12oz of soda roughtly 2 hours before my race, and 90 min before the race i have usually a gatorade. and its worked great i feel energized and good thorughout the race.
Caffeine, as well as antacids and vitamin E, interfere with iron absorption.
