Mum's the word but the small town of Niwot Colorado, 10 miles outside of Boulder, has an endless network of crushed gravel trails and immediate access to dirt roads that go on for miles. There's a reason why more Olympians (and future Olympians) live and/or train in and around Niwot per capita than anywhere else in the US.
Just a PSA for anyone considering a trip to run the carriage trails in Acadia this summer - many of them were washed out/damaged by a rainstorm earlier this year and are closed for repairs until later this fall. There are still many that are open for running but you may wish to check the Acadia Park website to see which ones will be closed during your visit.
Also, you now need an advance reservation to drive up to the top of Cadillac Mountain. In the past you could drive up and park at the summit anytime there was space available but that is no longer possible.
I love running the Carriage Trails! I live in Colorado now, but I love going home to see family and friends, so I can go to Acadia National park!

Visited Acadia two years ago and did the "Cadillac Mountain at sunrise" thing. You think you're going up there for a quiet, reflective experience as one of the first people in the United States to see the sunrise. Then you get there and you're surrounded by a few thousand people and you might have to park a half mile away from the summit.
It was still pretty nice, but I guess that's why they now require reservations.
I am not seeing some great places that should be mentioned.

oh no there are only 45 miles of trails instead of 70!
Boone/ Blowing Rock , NC
Miles of well maintained carriage trails as well as single track trails. In addition to some good microbreweries and great weather in the summer.
In the winter, decent skiing.
