Since we mentioned UVA, we need to give proper credit to President Jefferson's alma mater and The College of William and Mary. Although smaller than others mentioned, the campus is amazing and has an historic feel is that is hard to describe.

Lots of small colleges would get my vote; particularly in the Pacific NW and Northern California. Many of which I'd rank high above UW.

Pepperdine - amazing location above Malibu overlooking the Pacific.
Ohio State - just visited and shocked at how nice it was.
Amherst - Beautiful setting next to a quaint college town.
Delaware - surprisingly nice with a great college town adjacent to campus.
Ditto for Stanford, Williams, UVa., Dartmouth
Disappointing:
Yale
Air Force, no doubt.

Noone runs laps around that tiny Japanese garden, which is shoehorned in on the edge of the parking lot. Campus has a weird L-shape, since its built around the VA hospital, andhas a giant parking lot that separates the main part of campus from the athletic fields and pyramids and one of the dorm villages. Otherwise, the part of the campus around the classrooms is nice
North Florida, the host of NCAA East Regional track meet is awesome. Right next to the beach. Can't wait to go back this May.
I really liked the University of Richmond campus when I did a campus tour in the 90s.

Oooooo I forgot about Pepperdine. +1 for that.
Based on Campuses I've visited for meets and the meet is actually on or right next to the campus I rank some of them in the following order:
1. Penn State-beautiful scenery, hilly, great areas to run, not a lot of traffic if you get out of the main city area
2. Bucknell-similar to Penn State, great colonial area
3. Notre Dame-campus is very cool, however, city of South Bend not that nice, depends where you are going running
5. Grand Valley-similar to Hillsdale below
4. Hillsdale-small quiet campus, if you like the country this is great, farm land and trails around
5. Loyola-pretty cool right on the lake in Chicago, however, is a very busy city which can limit routes
6. Oakland University-nice suburb area of Detroit, but busy
7. UT-tennessee is great, but hilly and similar to Cincinnati below
8. Cincinnati-busy, really hilly, feels like everything is crammed in
9. University of Detroit-in a crappy area, can get nice if you go north from campus, campus is safe but don't go outside of it
10. Wayne State-cool that you are in the Heart of Detroit, but busy and not a lot of options, especially if you want to stay safe
11. Windsor-pretty much a continuation of Detroit but not as cool, warm up was terrible here
