Indian food is all sorts of better and superior. Mexican food, which is good, is nowhere close.
Only thing they have in common is use of cilantro/coriander and spice level of the dishes. Not even close. I love both of them.

Mexican food is more widespread than Indian food despite Mexico being much, much smaller population wise. It’s because it’s more versatile and far less objectionable in general. The extremes of any cuisine can be great or terrible. But if you take merely above average Mexican vs Indian, most non-Indians will prefer Mexican options. Qdoba isn’t a good example, but any taqueria in California is. Same reason Thai restaurants are universally popular - it’s just better than Indian.
The US shares a border with Mexico. Mexican food has been around in the US for a long time. All it means is that Mexican is a lot more familiar to American tastes so it is more widespread. You won't find any Mexican food in Africa or Asia, the Middle East, or most of Europe, but you will find Indian.
Most Americans have NO CLUE what Indian food is. To start with there is no "Indian food", its so regional and so different if you tried them all you'd be amazed at how different they are.
The US mostly sees a variety of modified northern dishes with a lightly seasoned sauce for flavor. Chicken tikka, daal, bad biriyanis, etc.
Some of the best Indian dishes dont even have a curry (or sauce).
I like both Indian and Mexican depending on my mood. Good Mexican in the US is regional too. The southern and western parts have the best.
