You can't really compare the Tour de France with an ultra stage race.
The punishment in a ultra stage race is a lot higher and the same for all runners. While in the Tour de France, the teams just paddle along, drafting which helps a lot. Close to the finish they send their sprinters up front. The same happens at the mountain passes where the mountain experts get positioned in front so that they can win the mountain stages.
Bicycling is a team sport and ultra stage running is not.
