"Hiking club" doesn't sound like an intramural sport
Just don't tell your coach and don't get hurt or busted.
Some IM programs don't let varsity athletes compete in their sport, which does make some sense.
We had a couple 800m runners play IM basketball. We weren’t supposed to. Both sprained their ankles.
The main concerns with intramurals are getting injured doing an un-related activity or competing as a "hired gun" for a team. If neither is a concern, you should be able to get permission from your coach to join an IM club.
my im bball team got railed by the football team and soccer team. pretty lame
Clubs and IMS are not the same thing. It's totally reasonable for a coach to say no to IMS. Most are duplications of varsity sports: soccer, volyball, basketball, etc. Clubs are not competitive. I can't see a coach caring if you hike once a month on Sunday.
