Our track coach doesn't want us to lift very much in the weight room, and it kinda makes going at all seem a bit pointless

Because distance running doesn't demand much more than the ability to lift a water bottle.
He doesn't want to be lifted on the teams shoulders after winning the championship.

Okay.
Being heavy is a problem.
Your time is best spent RUNNING! Lydiard said Hills are the only resistance you need!
Every coach has a different philosophy on what a distance man needs in regards to strength training. You'll have to do what he/she says. Strength is important though, since it develops bones, muscles, and tendons that help your running that don't get stimulated from running directly; Your long term health will thank you. Quoting one of the best run training books out there, "Better Training for Distance Runners", if you can do 50 push-ups in 1min, 9 Pull-Ups (palms facing away from you) in a minute, 50 Sit-Ups in a 1min., barbell squat your bodyweight (or just get to doing one-legged squats is equivalent), shoulder press 3/4 your bodyweight, and barbell curl 6/10 your bodyweight, you've got all the strength you'll ever need to build some lean/helpful muscle that'll improve the metabolism, prevent injury, and help improve your running efficiency.
Some anecdotes here. Mo Farah can squat 200lbs for 4-6reps, roughly 1.5x his bodyweight; Sebastian Coe was able to front squats 205 for reps and hold a hanging leg raise for a minute straight, he weighed 119lbs; Meb Keflezghi bench press his bodyweight for reps when he was in UCLA. Point being don't neglect strength training even if it seems pointless at times.
Thanks for reading, I hope this helped.
The more time spent running the better. Running produces better runners.
Not to say strength training doesn't have plenty of perks, but as a coach you are only given a limited amount of time with your athletes. He's doing the best with the time he's given.
