Those are a few things to consider.
Got news for you: a lot of hires are based on whether or not the person hiring you likes you.

Maybe the Hispanic owner just thought having Hispanics would be better for business. I am probably a rare person in that I can see cases where discrimination based on race is fine. Doubt I would expect a white guy to sell hair care products to blacks, for instance.

From what you've said, the "Hispanic guy" was to the point on why he was qualified for the job: you've to be nice and friendly to customers to work in a restaurant. You explained to them stuff like "I've done this before" etc, but your attitude is the most important part in that setting. You might've come across as arrogant explaining your skills, while the others kept it simple. The necessary skills can be learned. And it helped that he fits in culturally to the restaurant too.

not really in the restaurant business. people can pick it up quickly. it's more about your attitude and how you're going to be with customers and your colleagues. i think this is a troll tbh... the original post is too full of it. also, why is running better than playing the guitar? both of them have different aspects that could appeal to someone hiring.

No, you hire based on the quality of the persons personality. No one cares what qualifications you have. The only thing that matters is how you fit in and the potential you have. This isn't a job doing rocket science. There are lots of losers who think having some experience and pretending they have "work ethic" should give them the job.

He has no fewer than 15 sentences in his post and not one of them was started with "so". Yes, I did see the title. You are still ridiculous. Anyways, blue jeans and your letterman's jacket or whatever the hell you had on is NOT acceptable for a job interview (even for a job in a Mexican restaurant). Button-up shirt and slacks. End of story. I would agree that a suit is over the top, but you still need to look like you are trying.
