I did the NYC 60K and while I finished fairly comfortably, I can't imagine how people can run 68 more miles than that. Literally, how does one do that?

Slowly. And lots of training at said slow pace. In some ways I think you have to train the opposite of a 5k - instead of easy running and repeats at a faster pace, easy running and some mega long runs at a slower pace.
As someone who has done several 100-milers, I can say it's just about slowing down and eating/drinking more. Mentally, it's a challenge to keep going when all you want to do is sit down and sleep for a while. If you slow down enough, you can keep going for a long, long time. Plus, there's usually a fair amount of walking being done by most folks.
