has anyone here ever had one or known someone who has in the sports science division? What do the interns usually do? How much interaction do they have with the athletes and what sports do they help out with?

The job varies. Recently they were gathered weather data for Beijing. Pulling stats off the web.
They often assist with testing in the lab. A lot depends on the intern and the needs at the time.
Interaction with athletes can be high. Just about any sport can come through COS (I assume you are applying for COS and not Chula Vista). There are numerous sports that have resident programs at the training center in COS and then plenty of athletes who live in the area. Not a lot of the distance runners use the facility (2 hours from Boulder on most days getting through traffic).
Resident programs include mountain bike (although during the summer they are gone a lot), wrestling, boxing, weightlifting, triathlon (also many triathletes live in the area--Andy Potts, Hunter Kemper for example), women's volleyball, modern pentathlon, judo, mens gymnastics.
Very good place to work especially now that the division is getting up to full strength after several years of neglect. Randy Wilber and Jay T Kearney are great people to work with. (Randy oversees the lab although there is a lab manager that you would have more contact with--she knows everything, just ask her).
You will have a lot of interaction with the athletes. The place looks oddly like a Disneyland of athletics. Talk to Margie Hunt when you get the chance, the head athletic trainer. She's sharp as a razor.
