The saloon shootout in Unforgiven. Opens with Clint walking into the bar, which is crowded with gun-toting baddies who are getting ready to go find him, and saying, "Who's the fellow owns this sh*thole?" Then he proceeds to gun them all down as they panic.
The embassy shootout in Casino Royale was pretty sweet.

Not really a 'shootout', but I'd nominate the final battle sequence in "Saving Private Ryan" as one of the best of all time. The opening segment at Normandy is great, but the final battle is better (in my opinion) for being able to follow along with the strategy, etc.

'Silverado' c. 1985 was pretty nasty at the end. Good guys starring in their first major movie were Danny Glover, Kevin Kline, Kevin Costner, Patricia Arquette. Brian Dennehy plays a great 'bad' guy.
Kevin Kline starred in the Big Chill and Sophie's Choice prior to Silverado.
