I would suggest Cherokee Blvd and then connecting to the greenways surrounding UT's campus, you can run a good 14-15 miles on an out and back
I did the Cherokee run many years ago while in Knoxville and it still remains one of my more memorable runs of my running career.
About two miles west of campus down Cumberland/Kingston Pike (the main highway), Cherokee will pop up on your left at a light with a church you can park at across the street on the right. If you start at the top of Cherokee and run to the end and back, it is 5.2 miles of packed gravel down the median with every quarter mile marked. At the bottom, you can add on along the river on the grass/trail that is really nice but has a lot of dogs as well (usually won't pay any attention to you). On the west side of the church parking lot, the 3rd creek bike trail connects and you can run quite a way either right or left down that.
This is probably your easiest route if you are only going to be in town for a few days. There are plenty of trails and stuff but would take a little longer to reach and require more directions. Cherokee (Sequoyah Hills) is a really nice neighborhood and a great run.
Cade's Cove is nice...but it's in the Smokies. Rolling and flat with one way car traffic...roads
Cade's Cove is a great run. Get up there early before they let cars on the loop.
