I've tried a couple of different Skechers models and all have a very soft back of the heel, with no hard plastic. I've always found their shoe nomenclature confusing and I can't tell you for sure which ones I've tried, and they're probably not available anymore anyway.
Some of the New Balance shoes also have soft heel counters. The 1080 is pricey and heavier than I like but has a pretty soft heel. The Zante Solas has the softest heel I've ever found but it's also an extremely light shoe and doesn't have enough to it for daily training, at least for me.
