Based on the time of year and a couple of your replies in the thread I think the correct answer for you is to start a career, not find a new hobby.
-Start a garden
-Start reading/collecting books you like
-Get into a card game
-Start skating/cycling/swimming (really, any other sport you can set new goals in)

Juggle fish while running.
Do LARP. Learn to blacksmith to make it more real. Create a giant sword. Chop someone's head off and then say you were pretending.
Dig a hole to China. Get some local kids to help.
All that stuff is you and self. Try doing something for the benefits and betterment of others now. That's the hard stuff.
Dancing, Jive/Ceroc, Ballroom etc.
It will keep your legs & core/posture having a good workout, leading into the future.
If you are single, it's certain to meet a future partner there (if wanted), I did, we still both go out dancing and running.

I'd do something that you were always interested in when younger, but didn't have time to get into.
Things I never did, but might do some day:
-RC airplanes/gliders. Not the prebuilt stuff you can buy off the shelf or amazon - handcraft, make it yourself. Fly the gliders in the updraft off a sea cliff with real birds.
-Modify your car, do autocross, road races, drag races, go to car meets.
-Some kind of flight: sailplanes, small airplanes, small helicopters if you are rich. Wingsuit if you aren't worried about dying.
-Learn to do tricks that I've never figured out on the bike: manuals, big jumps, nose manuals, high bunny hops
-slackline
-play an instrument well enough to play in a band with others. (I played piano for years, but sucked.)
some things I did pick up as an adult:
- climbing/bouldering/alpine - I did it from about 25-30.
- cross country skiing - classic and skate ski racing, backcountry - I picked it up at 30, raced for about 10 years, just ski for fun now.
- orienteering. The quick thinking runner's sport, especially if you like maps, and running off trail in the woods. I did it weekly in the summer for 10 years, put on a meet a year too. Variations include ski-Os, bike-Os, mountain-Os, etc.
-auto repair. Not doing mods so much, can't justify the cost. But I like working on the car, learning everything about cars.
-hiking/backpacking. These days, I prefer day trips in the mountains, running where possible, back home to sleep in my own bed.
Raise a or some puppy(ies)/dogs. Train them in something, play with them, take them hiking.

Pick up a team sport that you've never played. Where I live there are plenty of adult hockey leagues for beginners. I know many people who have started playing hockey as adults and love it. You'll suck, but being bad means you improve fast.
You could attempt to climb the 2nd highest peak on all seven continents. You might find that this is much more difficult than climbing the "seven summits".
