Do any of you guys eat kale? I'm not a fan, but it seems like a staple in many healthy recipes.
I'm going with a cauliflower-riced chicken burrito bowl this afternoon.
Breakfast is two eggs, with diced onions and bell peppers, and a side of plain, whole wheat toast, and sometimes a cup of tea.
Lunch is boneless skinless chicken breast with a healthy marinade in the sous vide, usually paired up with some veggies. I actually like raw veggies, so usually just throw some broccoli on the plate next to the chicken.
Snacks are usually baby carrots with hummus. Go easy on the hummus.
Dinner could be anything. I don't have a go-to dinner. Some meat, some veggies, maybe some brown rice.
One thing I was surprised at how healthy it was is a lean beef stew. Get a lean cut of beef. Dice it up. Brown it in a pan with some olive oil. Add onions, celery, carrots, some low-sodium stock, garlic, some crushed tomatoes, some herbs and spices, and let it sit in the crock pot for 10 hours. I make a Mexican version of it where I add jalepenos, serranos, and some cilantro. If you're less concerned about sodium intake, you can go with regular stock and it's got a lot more flavor to it.
If you look at the rest of my diet, you see I hardly get any sodium, so I sometimes splurge on the beef stew. Still pretty easy to stay under 2g per day.
I don't have a particular meal per say, but I've cut out carbs entirely from breakfast, except for occasional cheat weekends when the family gets bagels. Have noticed I drink much less coffee and have more consistent energy throughout the day.

do you run? I haven't heard of someone cutting out carbs just for breakfast.

I do, yeah. Haven't noticed a huge difference besides the fact that my stomach is a little lighter than it'd be were I to eat cereal too close to an AM run. Definitely get a bit ravenous around lunch, but I'd say that's a constant for me regardless of what I eat for breakfast most days.
A close family member is TD1 (type one diabetic for those who aren't familiar) and she also runs... we consulted with a somewhat high profile person in the running community who also has a family member with TD1, and they recommended that my family member focus on gradually increasing carb intake throughout the day (so zero with breakfast, slow carbs for lunch, and most during dinner,) and we found it super helpful in regulating blood sugar. It's pretty difficult to be disciplined about, so I decided to join in the practice to make it easier. Can't say I'm always as adherent about it as I'd like to be, but have managed to keep it up at least Sunday-Friday.

Trudat. I would need to add butter and/or bacon for palatability and energy though.

pre-run: nada
post-run breakfast: fat bowl of oatmeal with banana, pb, cinnamon
lunch: salad of sorts... quinoa or farro w veggies (think roasted beets, squash, sweet potato, etc), maybe some spinach or kale, toast and add some pumpkin seeds, maybe some chickpeas, maybe avo... have an apple or other fruit on the side
snack: homemade granola w almond milk, apple with pb, or those Nature's Path buckwheat waffles w banana and pb
dinner: some favs are: curries w tofu, stir fry w quinoa/ salmon/ snow peas/ cashews/ scallions, lentil minestrone soup, simple frittatas with lots of veggies added, pesto pasta w homemade vegan pesto, shalane flanagan superfoods soup, simple things like roast sweet potato w 1/2 roasted chicken breast and some other veg for a side
fried chicken, baked potatoes, and collard greens
steak and fries with a salad

Right. And smoking cigarettes and breathing asbestos is good for you.
You should only eat meat / fish that you personally kill. Not only is it typically leaner meat, but you burn calories and gain an appreciation for it by hunting it down. I ate some salmon I caught up in Alaska this summer last night with pesto I made from basil I grew in my garden. It was delicious.
