I'm a woman with very long hair and run every day and it takes me like 5 seconds to put it in a pony tail or maybe 45seconds to plait it. Either work. Both are easy and I have long, thick, wavy hair. In fact its so easy, I can't think why anyone would go to the trouble of posting about it to the internet and making it into an issue. I also swim, again without any issues.
I have never needed to do a bun or run with it loose. It never gets in my eyes or does this weird stretching thing you talk about (is that even possible?). I don't need any hair products and let it dry naturally.
Your thread actually confirms my suspicion that there is a special species of man out there who likes to draw attention to his appearance with his hair, make a big fuss about "difficult" it is to maintain and call himself a hipster. You probably have got pretty pictures painted on your skin too I'm guessing (sorry, tattoos).
Concentrate on running fast and training well, not your hair.
