I don't think it's bragging. It's supposed to be an excuse for sloppy typing and text abbreviations.
That said, I removed the automatic "sent from my iPhone" tag from my email. It's really not that hard to type in actual English even on a phone.

Bad reason: it is branding, no different than all athletic apparel having a logo on it.
Good reason: it is a WARNING that the email can and probably already has been read by the CIA, FBI and Mossad.

Yes, this.
If that warning is not there, you can be reasonably certain that CIA, FBI and Mossad are not even aware of it.
And even if they were, they would have no idea how to access it.
People are more forgiving of spelling and grammatical mistakes if they know you typed it on your phone.
I agree with the above though, when I see the signature I often assume the user is too tech dumb to change the setting.
Also it's tacky advertising on apples part.
People leave those tacky dealership license plate frames on their vehicles too. It apparently doesn't bother them.
