Most charts I have seen are based on what my max HR is. What is the easiest way to determine that?

First do a 10 minute warmup.
Next do a couple of intervals at threshold pace.
Finally, run as hard as you possibly can until you drop dead.
Whatever your heart rate was just before you died was your max.

Whatever your heart rate is 790 meters into a warmed-up race-effort 800 is. A 600 should do fine.
Easy peasy.
