You make a lot of good points. If you're not gluten-sensitive then there may be no benefit to going 'gluten-free.'
On top of that, gluten-free breads and pastas and pizzas are a lot denser than 'regular' types and are actually more unhealthy. It's difficult for non-gluten products to mimic gluten-containing products.
