OP here for debriefing.
Ended up dating this girl for about eight months. Broke up with her four weeks ago. Turns out she was an emotionally unavailable person so I got tired of putting in more energy than she was willing to invest.
In terms of her not exercising. She ended up having a doughy body, i.e., skinny fat. Despite people hating on me for being shallow, her lack of exercise wasn't as much of an issue as her uncompromising personality. For instance, I often invited her to go on hikes or exercise and she seemed initially enthusiastic; however, when it came time to be active she would just complain the whole time. This behavior extended to other aspect of life where she acted wishy-washy.
Overall my philosophy on dating someone who exercises is not as rigid anymore, but in terms of life-long compatibility I probably need to marry someone who appreciates SOME form of exercise. I found she didn't like exercising mostly out of insecurities and a negative mentality, which are things she would need to address if she wanted to change.
More important lesson here is to date people with similar recreational interests so that dates and hanging out don't feel like a chore for either person. Also going to try to avoid girls who are emotionally unavailable; however, often by the time you get to know definitively you've been seeing them for a while.

Its the whole mentality of Med school folk screwing their own little pool of people and thinking the rest of the world couldn't understand them... Your pool just shrank even further, you not only need an MD but you need a runner/athlete MD.
