Large state schools typically have the top Kinesiology/Ex Phys programs. Most of the top 10 are in the sun belt, so you have great exercise science programs but you will be training in the heat during the summer.
You will almost certainly need a master's degree or doctorate to do anything in the field that makes more than 30k/year.
You might want to consider getting a degree in biomedical science or biology as an undergrad and taking the senior level ex phys course. Then go into a decent grad school program.
If you're interested in biomechanics, engineering is probably a good undergrad major. You'll get into a better doctorate program that way.
