They taste the same (maybe a bit drier) but I was wondering if the protein quality would diminish with time? And if it does, will 6 months to 1 year make much of a difference?
They're vacuum sealed in individual packages and it's a dry product so I guessing I'm not stuffing my face with bacteria bars...
I don't think it should be an issue. I do this all the time (there's a local store near me that sells beat up boxed/canned foods at a super low price, as well as some other things like expired protein bars. Although these bars (even when fresh) usually aren't very good for you (you can make much better ones yourself from scratch), I still love eating them and they're better than just eating a candy bar (though most are just like eating a candy bar with added protein really).
The protein in them should not "denature" or anything unless they've been exposed to really high heats, in which case they would've melted anyway.
I say go for it, especially if you're a struggling student like me.
