This one is easy. The weirdest guitar solo ever is the outro solo on Steely Dan's "King of the World," the last song on the album Countdown to Ecstacy. I think the solo is by Denny Dias.

Though it's not a guitar solo, the keyboard solo on the Dead Milkmen's "If You Love Someone, Set Them On Fire" is weird as it seems to showcase a complete lack of knowledge of key. Rhythmically I guess it is coherent, but the actual melody has no destination, purpose, or cadence. The notes could have been chosen completely at random and it would have made more sense. Regardless, I still think that band is genius.
I think that if it was ever played on guitar by anyone, it would then become the weirdest guitar solo ever.
I don't know about ever, but whenever I hear the solo on "Californication" by the Chili Peppers it seems bizarre and out of place.
Scary Monsters by David Bowie - Robert Fripp freaks out on that track.

Yer Blues by the Beatles (or specifically George Harrison) on The White Album.
But when "The Dirty Mac" performed it for The Rolling Stones Rock and Roll Circus in 1968, Eric Clapton plays lead guitar and does an amazing solo. That is not weird at all, rather inredibly awesome.
So...

Guitar solo in Driven to Tears by the Police. Fairly straight forward melodic song, then this wierd a-tonal solo comes in totally out of place. The first time I heard it I was like "what the hell? was that genius or did that guy just suck on guitar?"
I actually saw them do this song live and Andy did a longer more bluesy pentatonic based solo.
The solos on "Eight Miles High" by the Byrds.

For some reason, I was under the impression that John Lennon performed that solo. It's surprising how many of the Beatles' guitar solos were performed by either Lennon or McCartney.
