Probably because NYC people are generally awful and one of the ways they are awful is making ordinary “accomplishments” a reason to brag. It’s probably not even in the top 10 of reasons they’re awful though.
Curious. How do you generalize millions of people as awful. And what does awful mean? Considering that almost 40% are not native NYC residents? Are they included too in your naive infantile generalization, countryboy?
I lived in Manhattan for years. I've never heard anyone brag about getting a dinner reservation.

It shows you have never been to NYC to eat at the finest places. It’s extremely difficult to get a reservation at a good/exclusive restaurant on a Friday or Saturday (even hard at some during the week). You must realize many restaurants are small with limited seating (have you ever heard of supply and demand?). I don’t think any of these folks you hear bragging about a reservation at Applebees, Chilis, Olive Garden or Texas Roadhouse. In NYC you can also just walk right into a McDonalds or Taco Bell without a reservation if that is your fancy. Let me guess, your from Iowa or Nebraska??

There are some places in NYC, particularly new places or highly publicized places or celebrity-sighting places, that are difficult to get a table. So if you want to go there, it's a little bit of a logistical ordeal. And because of that, people might express relief or enthusiasm or frustration when they finally get through.
Weirdly, people do the same thing with free parking spaces. If something is difficult to attain, and you finally manage to get it, why not have a little ironic 'YES!' moment with the universe.
I guess there are people who brag about NYC restaurant reservations, but they are probably doing it as a one-degree separation from bragging about going to an expensive restaurant; probably some others do it to make themselves look 'connected'.
These are small victories. Let them their moment.
I would assume there are some places with such a demand that you cant just make a reservation. You have to know someone to even make the reservation in the first place

I just read this article about the competitive world of restaurant reservations in NYC. There is even a secondary market where you can buy a reservation at top spots.
Because all the other aspects of NYC are awful.

They put a CC down. That is the cost of renting a space (a table) from a landlord (the restaurant) that itself has a cost. If that table goes unserved, he still has to pay cooks and other staff, utilities, raw material spoilage, etc.
Yes, I know some of these things are exaggerated but the cost is by no means zero.
