Running on ice requires a short, choppy stride. It doesn't ruin your form at all. Regular running on ice will develop some of the smaller, little used stabilizing muscles in the upper thigh/hip area.

If you want to develop stabilizing muscles, run fast or run uphill or downhill. You're not going to be running fast on ice for very long until you get some kind of injury.
Have you ever run on slippery snow or ice for miles, then run on a patch of clean asphalt? The difference is immediately apparent and it becomes obvious that you have been overstriding in order to keep traction on the ice. You need to overstride by a few inches because your foot will slide backward during extension. It's not a conscious decision but automatic to keep moving forward so I can understand that you don't notice it.
