I think the standard for illegalizing a contract should be significant harm/risk to third parties. I should never be prevented from entering into a contract because of potential harm to myself. It's my job to make that call.
I don't really know much about the sex worker industry. Are these contracts truly entered into by willing adults who are not under duress? If so, I suppose they should be legal. Though per the standard above, I am okay with illegalizing the purchase of services from such a worker on the basis of the public health risk (acceleration of STIs harms people beyond those directly involved in that particular purchase contract).
