The "current pace" is obviously always off
The "average lap pace" is fine, but can be misleading at the beginning or end of your auto-lap mile or whatever you set it to.
The option to have the pace constantly updating of your last quarter-mile or whatever distance or time you want should be an option. I think it would be way more useful if you actually wanted real-time pace information.

Works great on my garmin fenix2...
What watch are you using? I've been using tomtom cardio since they rolled out the first model to have the HRM on the wrist. That watch has avg lap pace and total run pace automatically.
You can also set lap intervals to automatically display. I have mine set to 1/2 miles. So every 1/2 mile it chimes and shows the avg pace over the last 1/2 mile.

My Timex Marathon GPS works kind of like what you want and I hate it. The rolling pace seems to be over the last 1/4 mile. I may be jogging along at a 9:00 pace and then start a long surge. About every 10 seconds I will see the pace drop to 8:50, 8:41,8:33...even though I'm running 6:00 pace. By the time it gets down to saying I am at 6:00 pace then the surge is over and I am recovering. Sometimes I will have slowed down and the watch is showing my pace is still accelerating. I miss my Garmin's average pace for the run - that was great for keeping me on pace for longer races.

You are correct that, that is not "rolling average", however is it exactly what the OP requested - "The option to have the pace constantly updating of your last quarter-mile or whatever distance or time you want should be an option."

No it's not, he wants the pace for the last quarter mile (or whatever distance the user is interested in) run updated continuously (or however often it can be updated). What you are describing is getting a new average after each quarter-mile interval
My old Garmin has a lap pace option that does this. Set it to start a new lap every 1/4 mile and it will display the rolling average for the current 1/4 mile.
I don't get it to do that though because it's current pace is accurate anyway.

Yeah, Garmin doesn't let you do this anymore, but it was an option on the older watches. The reason is that it gave you a false sense of control. In reality, there is no such thing as "instant pace." It's always a smoothed rolling average, and Garmin is always tweaking and improving their programming. On modern watches, it's more sophisticated than just a rolling average of a particular distance.
Some of the newer Garmins support this option. You need to install a Connect IQ app.
Sounds like people don't know what rolling average is.
Consider points A, B, C, D, E. Between each point is 500 meters. The lap function or avg lap pace is the pace between each point. (A->B, B->C, etc).
A rolling average could be any 500 meter section. If you are half way between B and C, then the average is from halfway between A and B to halfway between B and C. Each meter you move resets the "starting position" by one meter.
And instantaneous pace is an attempt at some sort of very short rolling average and it sucks. Lap pace is best you can do on Garmin. I run with 1km auto lap. Good enough. Just 30 seconds or so after each lap the pace may not be accurate.
