I look up both st.paddi day results and none of the races had
a 21 year old running a 16:30. none had any 40 year old under 16:30.

That is a pretty solid time for somebody not doing any distance specific training. Don't let the haters get to you. I think you should start by running with your friends on the XC and track teams. Start by joining them on their easy runs.

Here is what we do for soccer:
Mon/Weds: Drills, scrimmage, gym (abs and upper body lifting)
Tues: Hard 2-4 miler or interval runs or suicide runs
Sat: Game or interschool scrimmage.
Thursday on my own I go to the gym with a couple guys from the team. Friday I always take off because we usually go out.

When one trains for distance running, not all runs are hard or on the track. Typically there are designated workout days and non-workout days. During the latter, runs are at a relaxed pace over 6-8mi.

Ok,
So for example I will probably try another 5k in a couple months and aim for a 15. What would be a good plan for running? i already do the intervals/hard run 1 day a week. I could probably add 2 more days that I don't have soccer. What would you suggest adding?
I'm pretty excited to try again. All my buddies track and field friends seem to think it was a really great start plus half the people who respond on this board don't actually believe me so I assume they think the time is fast (aka not believable) which is encouraging.

go for it. The ski is the limit. Perhaps you can become a world champion one day. One piece of advice: just continue what are you doing but increase the work load (what you are doing is working for you).
Yeah I think lots of guys underestimate the amount of running soccer players do. It's up to 10 miles a game. The only problem is I barley play (average maybe 5-15 minutes a game)
So honestly game days are my easiest days. Scrimmages I'll run at least 5 miles and our hard runs including warmup = 3-4.
I could easily add 2 more days of running specific training.
As for speed I'm definitely the fastest guy on the team. We've done a couple speed specific sprints and drills and I'll usually win or come 2nd.
I read up to 15 miles in Premier League, although you are not quite there I suppose.

No soccer player runs 10 miles in a game. The top players in Europe run at the most, 12-13km and that is unusual.

The best players are certainly not that close more than half the time, and most of their running is chopped stride and zigzagging, not the kind that would make it 10 miles or even 10k in 45 minutes.
