I would guess that many of the elites were taking supplements to speed up the recovery from high intensity training. Every body has a breaking point.
Tim Ferriss did a podcast with one of the main scientists advocating HIIT. It's a good listen.

At no point did Mr. Gibala claim that this was about coaching elites. He basically said that mixing up the effort was good for you. So for a sedentary person, walking and jogging/striding alternate lampposts might be their HIIT.
Also, for people with maybe one hour for lunch or 45min on the away to/from work, you wanted a workout (with warmup and cooldown) which could fit into 25min or so.
Now for the really funny bit: his favourite protocol would be 3 x 5 min or 5x3min with 1min. Classic 5000m training of the type distance runners do on their Tuesday nights all over the planet for decades. He calls this "HIIT" and thinks it's new. To be fair, he doesn't come from running or cycling. It comes from testing what works on non-athletes.

Since when do distance runners not do interval training? Is everyone here mad? Do you think you just run 100mpw and then run 13:00 for 5k?

When you're over 50 with a history of chronic injuries. Interval training is good for older cats, but you better have good genetics, a low injury history and probably be a flyweight to pull it off on a regular basis...who would have thought.

Thats correct!Real H.I.I.T can`t be done for a longer period. I use it sometimes to "wake up " the body. But one can also think
of shorter maxVO2-intervals as a mild form of H.I.I.T that the body can take week after week and improve from it.
