If you just take pills, it can take several months. A liquid iron regimen of 1000% in orange juice over 12 days usually does the trick for me very quickly. If you reach out to me off of this website (I'm very easy to find if you google my username) I can send you the details (how to get cheap liquid iron, when to take it, and so on).
It might take you longer since you have Crohn's disease, especially if you are having a flare-up. It also takes a lot longer if you've been iron-deficient for a long time.
I'm not sure how long IV iron would take, but I would very highly recommend getting it because of your Crohn's.
There is no problem with running while it's low, other than if you don't supplement, you'll end up more anemic than you are.
