You have to grill the sandwich. Nothing beats a grilled cheese sandwich.

You need to vary up the Cheese. For instance, don't have one type of cheese.
Try a grilled cheese sandwich with American, Cheddar, Swiss, Blue Chease and Cheez Whiz (the variety in its texture really helps) and top off with jalapenos. It has great mixture of tastes along with some zest.
Grill it and add fresh tomatoes and basil. Also, it is important to use a blend of different cheeses to yield a more robust flavor.

I add Tabasco to every bight of my cheese/ham & mustard and it makes me salvate like im a dog
olive oil, pepper, garlic salt, spicy mustard. melt it.

Grilling the sandwich is obvious.
Make sure you preheat the skillet (takes a few times before you figure out the right temp to brown the bread without burning it).
don't use cheese right from the fridge. I've had trouble getting the correct melty cheese texture with cheese at fridge temperature. let your cheese slices (i use two slices of differing cheeses per sandwich) sit out a few minutes or spread them out on a single layer on a plate and microwave for 6-7 seconds or so.
This might be cheating, but a slice or two of bacon or prosciutto can help a lot (too much and it still tastes great, but is no longer a cheese sandwich, but morphs into some type of "melt"!).
Grill it on a charcoal grill!
Put liver on the sandwich. Tasty and nutritious.
