Depends on a lot of factors. If the 2:41 was not hard and with a fairly conservative training plan, more improvement can be expected. If the 2:41 was a b$tch and with a huge amount of miles in training, then big PRs might be running out. Also, if you were a 31:00 10k-er in college but have been out of shape, more improvement is certainly possible. But if you are a pure amateur, losing minutes on your time will become more difficult.
Generally speaking, getting below 2:40 is hard, but doable for runners with talent and dedication. Every minute from 2:40 down to 2:30 gets significantly more difficult to knock off your time.
To answer the question, in 6 months, sub 2:40 is definitely possible. Pushing to 2:35 is risky unless you were previously running on a high level in college or as a post-collegiate sub-elite. Regardless of the foregoing, 2:41 is a solid time. Keep at it. The sky is the limit.
