If i had a race on Tuesday, which plan would be better?
Plan 1
Saturday : Rest
Sunday : Easy 5-7
Monday : Easy 3-6
Plan 2
Saturday : Easy 5-7
Sunday : Rest
Monday : Easy 3-6
It's just switching my rest day...but yea..

It sounds crazy, but do what your coach tells you. Coaches seem to know a lot about coaching.
But if you don't have a coach, then I would say throw out the rest day. Run a tempo run on Saturday, easy 60 minutes on Sunday, and an easy 3 miles with 4x100 strides after on Monday.

This ^ sounds about right.
I'd feel pretty sluggish for the race with either of those schedules. I like to do a light workout two days before the race--not enough to make me sore or leave me tired for the race, but enough to get the legs turning over. I'd get rid of the rest day and do a few 800s or 1000s on Sunday.
