since i go to a "real" old fashioned barber, i am not sure where that leaves things following my wife's rules.

Might be true in NYC or other expensive cities, but most places people pay less than $15 total for a haircut from a traditional style barber. My barber, for example, charges exactly $15 for a haircut. The only way she'd be making a $15 profit would be if she didn't pay any expenses at all. I would question whether an NYC barber could make this kind of profit as well. They probably charge significantly more, but I'm sure that much of that goes to paying higher rent for the shop.
Just do the math on the $15 profit and see if it seems realistic. Most barbers do 4 cuts an hour. If you assume that they work 8 hours a day, 5 days a week, 50 weeks a year, that's $120,000 a year. Do you think that the typical barber makes over one hundred thousand a year?

Tipping is usually decided indirectly by the owners and people who pay waiters, waitresses, etc. You see if as a barber you are only getting paid $5.00 and hour, tipping is expected by the customer. This is why we tip waiters, because it practically is their salary.
Like it, or not, the world operates off of the favor system. They are not unlimited, and you are not necessarily (sp?) entitled to any of them.
People will always be inclined to help take care of people that take care of them. When your car breaks down, and you need to have it fixed, who do you take it to? The guy who says that he'll get to it whe he can, or the guy that knows you, knows that you take care of him, and says that he can get you right in because of it? I took my car to the shop yesterday. They didn't charge me for two things that they did, because "We just want to earn your buisness". Care to guess where I'm taking my care in the future?
For the record, I tip $2.00/$14.00 haircut.
