Has anyone else struggled to exercise since getting Covid? I'm almost certain I have long coivd and none of the doctors know what's wrong with me. I love to exercise and I would do anything to get back into it.

I have had 5 covid jabs and have never had covid. I feel great. Best shape of my life. My brother-in-law is a hard core anti-vaxxer, who preaches endlessly about keto/paleo diets, call(ed) himself a "hybrid athlete", can give you a lecture on vitamin D that will last 30 minutes, was a big muscle dude, low body fat etc. However, he got Covid bad. Was sick in bed for three weeks, was tested when he broke down and finally went to the hospital because he was having a lot of trouble breathing. He has been unable to workout/go to the gym for over 4 months. Has lost a lot of muscle.

I'm in the anti-vaxx camp, but long covid was occurring in 2020 long before the vaccine became available so it's obvious that long covid exists.
There's a sub-reddit for folks like you. I think it's called long haul covid or something like that. Check it out. You can also find a treatment protocol at the link below from the FLCCC.
FWIW, my sister got vaxxed twice in 2021 early 2022, but she didn't go any further since she had severe reactions to both jabs. She got covid later and now has long covid (long vaxx... whatever). She says resveratrol really helps. (It's mentioned in the FLCCC protocol.)
I noticed several references to the Jarrow brand lactoferrin recently on the reddit forum so you might consider adding that. Lactoferrin is pretty neat stuff. Read up on it.
If you decide to try any of these treatments, post back here and let us know if they helped you. We are mostly lifelong competitive athletes here. We're so many standard deviations away from the "average" person that modern medicine doesn't know how to treat us when it comes to not just getting well, but getting back to exceptional fitness.

Wait. So you were sick and think you can automatically bounce back? What fantasy land are you in? Especially if you have long covid. I mean seriously. You know long covid exists then you essentially ask if long covid has long term effects.
Back in the 1980s, for many years, I had Chronic Fatigue Syndrome (CFS) which can have symptoms very similar to what some are calling long covid, including even moderate exercise causing severe debilitation. After healing, I ran a CFS support group. Some people reported developing CFS after an acute illness.
Decades later, I had chronic exposure to mold (specifically high levels of Stachybotrys chartarum) which was above the ceiling and behind the walls in a long-term house rental. This type of chronic exposure can cause damage to the mitochondria and exercise can cause debilitation (similar to long covid). In my case, it was an acute illness that was the straw that broke the camel’s back and the symptoms became debilitating.
My point is I think there are a variety of issues that can *contribute* to long covid like symptoms and a significant acute illness can bring those symptoms out.
I suspect that fully healing from long covid symptoms will require a multi-faceted approach similar to what many have found successful with CFS and chronic mold poisoning. Your average healthcare practitioner is not trained in these areas in my experience.
