I have family (multiple) who went to UF. They enjoyed their time in Gainesville and value their degrees but would be the first to start laughing at your assessment of the school.

Some people have goals that are not strictly about Money, Maybe she want to see how good she can be/Maximize her Potential, Compete Internationally, Travel The World etc. Money will come if she becomes a top runner, but Money should never be the only.
You don't think a degree from Florida gives a graduate more job opportunities than one from NAU? Florida is a highly ranked school whether your friends believe it or not. What are they doing today.
Another answer is she likes being in college. She wants to enjoy that environment for as long as she can. Once it's over it's over. She'll make plenty of money as a pro. Also she'll probably marry a rich guy too so money isn't a concern.
