The same thing that happens to American money when those pictured there die.
Serious question for the Brits here. Do you change the money? I'm sure the old bank notes will still be good to use, but will they start to print new ones with Charles? Will they need to reshape the money so that his ears fit?
We don't print money with living people on it. Grant died 130+ years ago and is the most recent person on our money, not counting coins.
Hopefully they put Meghan Markle on the next series. She deserves it for her philanthropy and all the royals put her through.

U.S. notes and coins are also regularly taken out of circulation in favor of newer ones. Sometimes the images in them are even updated.
The US batting order of Washington, Jefferson, Lincoln, Hamilton, Jackson, Grant, and Franklin hasn't changed since 1928. The bank notes are regularly updated with anti-counterfeiting measures but the people on them haven't changed in nearly 100 years. And they were all long since dead before first appearing on money. We do not put living persons on money or stamps.
This reminds me of when I was a kid in England in the 1950s. ( well, from 1952 ) In those days you could put your hand into your pocket and bring out coins with at least six different monarchs' heads. From Victoria to the present Queen.
