Catholics (Galen, Dathan, Meb, Lagat) and Orthodox (Kenenisa B and other Ethiopians) make the sign of the cross, though with a different touch pattern. Protestants (Ryan Hall?) rarely do.

Everything that has been previously posted is incorrect.
The reason that people cross themselves after a race is to ward off the demons, since we know a human's soul is most vulnerable at then end of a race. Salazar forgot to cross himself before his heart stopped and he was dead for those few minutes as his soul was being taken by the demons, and while he is still alive today, we all know very well that his soul is long gone.
The sign of the cross is: a confession of faith; a renewal of baptism; a mark of discipleship; an acceptance of suffering; a defense against the devil; and a victory over self-indulgence.
I think I have seen Rupp and Ritz do it at both the start and finish. Catholics do this at the beginning and end of Mass also.
