Why do elite runners see chiropractors if they have been proven full of it by medical associations?

Because doctors and the medical organizations are liars, full of BS, and dangerous.
Because they're cheaper, and runners are cheap.
Even though in the long term it makes more sense to see a sports doctor or physiotherapist by resolving an injury in 2 or 3 visits, vs 10 visits to the budget chiro.
Some give a happy ending.
B/c people are stupid.

What's your story? Got dumped by a Doctor and can't get over it? Tried to get into med school and was rejected? Your wife or partner cheated on you with a doctor?
Because joint manipulations do offer relief for some musculostructural issues independent of the belief in subluxations (as defined by the chiropractic perspective).
In other works, causing a joint to pop feels good and can offer short term pain relief.
I had a back injury so bad I couldn't walk for two weeks. Doctors couldn't do anything for me but offer pills. Three visits to the local chiropractor and I felt better than I had in 15 years.
I'm a 28 year old woman who has suffered with migraines since I was about 16. A lot of young women do, and basically that's how doctors always approached my suffering. Two visits to the chiropractor per year, and I have't had a migraine in about 18 months. You have no idea how much that improved my quality of life.
Chiropractors aren't quacks. They actually do help....back pain especially.
Because medical doctors refuse to do much of anything for back and joint health.
The fact they focus on pain shows their approach is palliative and not preventive. They have no way to stop your bones and joints from deteriorating, and they're not looking for one.

I'm an honest person who sees the truth about doctors, all of whom are idiots. Doctors dump on everyone, because they're greedy idiots who don't care about anyone but themselves. You're a typical example of this. My wife disliked morons like you as much as I do, probably more.

There are a couple conditions chiro has been shown to help with. The problem is a lot of them claim to help with 800 other things

Because virtually all sports medicine physicians are completely useless at dealing with running related injuries and so elite runners will be prepared to try anything else to help cure or prevent their injuries.

None of the above. Most probably, like many serious runners he paid a "sports Doctor" a considerable amount of money to help resolve a running related injury and the "sports Doctor" was clueless as to how to deal with the problem. If you don't know how to deal with a problem someone has then you should not be charging them any money as you are not competent enough to be dealing with that problem - it really is that simple and this goes for any job or profession in life.

People see chiropractors because they work, sometimes extremely well depending on the person, condition, and chiro. Whatever any doctor says is irrelevant.
I had a chiropractor do more for me in 10 minutes than a PT did in a month of treatment. A doctor would not have been able to do anything for me at all other than prescribe pain killers.

"All of whom are idiots?" Get back to us when you or a loved one gets in a serious car wreck.

You need to see a doctor and you will have to at some point.

Most likely placebo effect
It is imperative to use Evidence based and peer reviewed research in the medical field. There is a reason that Doctors take years and years of school before they become professionals.
Chiropractor degrees are not offered at Medical schools because they are not based on evidence.
I can't say that they are all bad people. But I can say they are unqualified "Doctors". Who make good money using practices from the 1890s based on no scientific basis.
Vertebral subluxation, the core concept of chiropractic, is not based on solid science.[3] A 2008 review found that with the possible exception of back pain, chiropractic manipulation has not been shown to be effective for any medical condition.
he cost, effectiveness, and safety, of spinal manipulation are uncertain.[3] Edzard Ernst stated "the best evidence available to date fails to demonstrate clinically relevant benefits of chiropractic for paediatric patients, and some evidence even suggests that chiropractors can cause serious harm to children".[74] A 2007 survey of Alberta chiropractors found that they do not consistently apply research in practice, which may have resulted from a lack of research education and skills though the chiropractic profession has research-focused professional training encouraged by professional association incentives which provide time and support for research.[75] According to David Colquhoun, chiropractic is no more effective than conventional treatment at its best, and has a disadvantage of being "surrounded by gobbledygook about 'subluxations'", and, more seriously, it does kill patients occasionally.[76] Neck spinal manipulation has a risk of stroke or death.[77] Although rare,[8] spinal manipulation, particularly of the upper spine, can also result in complications that can lead to permanent disability or death
