I would want a yute with better gas mileage.
Like a 40mpg version of an el camino, basically.
Instead I'm driving a 4 cylinder tacoma, which is the closest available in the US.
I have no need for towing, 4wd, or high power, but I do need to put a beehive or large amounts of music equipment into my vehicle from time to time. The beehive means no minivan or hatchback, which would otherwise carry lots of music equipment.
I think there aren't enough people like me though, even finding a 4 cylinder pickup is hard, so few are actually made and sold, although most brands offer one.

It would give the driver the illusion that it is stable in any road condition. It would be huge, so huge that it could drive over a Prius with no damage (Prius would of course be totaled and the driver of it killed, but that's their problem for driving a Liberal Mobile). So huge that it cannot fit in any parking space, but that's no problem because there are always Handicapped spots or parking sideways across two spaces then still dinging the commie pinko in the compact car in the third space. It would get 8mpg in town, 15 hwy. But who cares, gas is cheap! This vehicle would NEVER be driven off of a paved highway and certainly never dirty. It would likely fall apart if it were.

4 cylinder pickup truck that gets about 35 mpg highway. Extended cab would be nice but I don't need double cab, 6 cylinder, AWD, 4WD, etc, but I occasionally need to haul some firewood, bikes, kayak, et cetera. My first vehicle was a 1970 Datsun pickup and that little truck was tough and could go anywhere and do just about anything.

Pretty impossible for one vehicle to meet all my needs (except in fantasy land).
We have a car for a driver which gets great gas mileage. In an ideal world it might be a bit more comfortable, but it is comfortable enough.
We have a truck for hauling and camping that gets pretty minimal driving.
The combination works for us.

Either the Lada Niva or the UAZ-452. You can get them in Russia, but definitely not here.
Ural motorcycles with a side car also are pretty cool, but I wish they were a little faster and got better mileage.

Pretty boring response here, but I am perfectly happy with my Honda Ridgeline. I enjoy having a truck (okay...so it's an SUV with a truck bed), and the Ridgeline has the added bonus of an in-bed trunk. I own one of the high-end models, so the interior is nice and has about all the bells & whistles I need. I'm going to drive this vehicle until the wheels fall off.
I'd take a new version of the original Audi Allroad (mix the original body size with the sleekness of the new Allroad). Mix in engine and styling of the RS6 Avant, realiable adjustable air suspsenion and a 6 speed and I'm a happy man.
Or just try to sneak in a Euro 2017 A6 Allroad Quattro with a top-end engine.
Hilux 2.8D double cab would make me happy.
