In high school, the longer events (1M/2M, 1600/3200) are often consider "distance" events. But at higher levels those events are more commonly considered as "mid-distance" events.
So where do the "distance" events really begin? 5K? 10K? Longer?

I could see the mile/1500 being more mid-distance while the 3k/2-mile being long-distance with the steeplechase, 5k, 10k.
Anything less than 5K is not distance.

No, 3 mile is a distance event.
I would agree. But where do they run that?

Yep. 3000 straddles the line between mid-d and long distance. 3200 is long distance. Steeple is for those not good enough for the 1500 or 5000.
sprinting:
60m
100m
200m
300m
400m
500m
600m
middle distance:
800m
1000m
1500m
1mile
2000m
distance:
3000m/stp
2mile
5000m
6000m
8000m
10000m
anything after that is off the track (long distance)
In my opinion from 600m to 4000m is middle.
