Saucony Freedom?
Saucony Freedom ISO is super flexible and super cushioned. Kinvara is flexible with less cushion.
On CloudX is super flexible and has some nice cushion (although definitely more of a ground feel than other shoes in the mid-cushioned, neutral category).
I'd go to a local running store and try a few pairs on to see what works for you.

Saucony Triumph as well, bunch of cushion and still pretty flexible. Freedom will be more flexible and less cushioned though
How flexible do you want them to be?
My most flexible yet softly cushioned shoes i own are my Nike Free RN 2017 (now 5.0 again i think)
I've yet to run in them though as i solely use them as sneakers in the summer.
My most flexible shoes i actually run in are my Altra Escalante 1.5 which are also nicely cushioned too if you're not a heel striker

What you're looking for is the Altra Escalante 1.5 (if you can still find them) The new ones aren't as soft.
