300HP is not a very important number. It is extremely different in a typical 4200lb car vs a 3000lb car.
The BMW 135i is about 3400lbs and is rated at 300HP but known to actually be closer to 320 HP. It gets close to 30mpg on the highway and is a blast to drive. You can pick up a really clean low mileage model for ~$15K. Mine is tuned now and about 420HP and gets closer to 20mpg with my driving habits.
Corvettes and 911s do actually get very good mileage on the highway but can easily dip near 10mpg with full on hard driving. Unlike a Tesla, you can drive them hard all day long.
Assuming you aren’t looking to spend north of $60K, non of those are good options.
Personally, I’d go used BMW 135, 235, 335 or something like a Subaru WRX STI, Volkswagen GTI. I’m assuming you’re looking for a fun car based on the question. Most of the new Infiniti’s, Lexuses, and even Hyundai’s approach 300HP but unless you get the top of the line models are really not much of drivers cars for the most part.
I LOVE my Audi A6 3.0T quattro! 310 hp but not quite the economy you're looking for. 27 mpg highway.
That being said - it's like a rocket getting onto that highway!
