Honestly, it is weird if she is inviting just you to a happy hour in an initial meeting.
Lunch would be more appropriate.
But maybe there is a work group and you have been invited to tag along. And it would be optional. That wouldn't sound weird.

No. It's not remotely weird or inappropriate. It is 100% normal.
By meeting after hours she's sending the signal that she's someone you can trust (i.e., she'll tell you who to avoid working with, will give you advice if you're considering leaving for another job, etc.). That doesn't mean you should trust her immediately, but hopefully you'll eventually figure out if you can.

I did this on my first day and ordered a pitcher of the highest ABV beer I could find. I was so blasted, I had to wait a few hours before I could drive home.
If I could do it again, I would have picked a low ABV and limited myself to 2 drinks.

Get used to it if you want to move up. Personally, I like to spend most of my time outside of work with my wife, but occasionally get pretty obligated to go to after work “team building” events. It’s a nature of the beast to build good relationships, and it can pay serious dividends. Fortunately, they all like my wife and often invite her too.
At one of these events (a birthday party) my boss and I were both a bit tipsy and my wage came up in the discussion. I was happy with my pay and had only been there for 6 months, and he decided on the spot he was going to give me a $15/hr raise.. Within 2 months that raise started hitting my paychecks..

No, that's not weird. Regardless of gender, it is super common where I work to get to know new employees over drinks. Both me (a male) and a female who started around the same time as me have been taken out for beers (as well as coffee, lunches, etc.) multiple times by both men and women at our office (of all ages) just trying to get to know us better.
Working people like to have some alcohol to unwind. If you're not a drinker, either tell her that and suggest coffee instead, or just order an app. Expect her to ask where you went to school what you like to do for fun, and plenty of other casual not super personal questions.
I think this depends almost entirely on your workplace. It doesn’t really matter what happens at other workplaces.
Where I work any mentoring would most likely be done at work during working hours, especially if it was a non-optional part of the job and a formal arrangement
