If you're looking to stay with NB, check out the Fresh Foam 1080. I'm not a bigger dude, but I like them, and I've heard lots of other bigger runners do, too.

I’m orca fat and I went from Brooks GTS 18’s (they were good) and made the mistake of NB 860’s which made me feel like I had dead legs to Hoka Arahi 3’s, which are amazing to me.

I was 200 lbs, and lost 20 lbs running in the Hoka Bondi 5. Now I run in Hoka Cliftons most of the time.
Don't be afraid to err on the side of too much cushioning. It can always be your easy day shoe after you lose 5-10 lbs.
It's not wise to try to lose weight in an under-cushioned shoe, because you might not end up losing the weight because your shoes aren't comfortable enough.
As far as diet, focus more on portion size rather than exactly what you are eating. If you eat smaller meals, your stomach will shrink and you won't get as hungry, as often.
