USOC pays for blood tests for athletes at her level (and even way lower than her level) and it's usually something that is setup at the beginning of the season. You can do those tests anywhere in the US and it's also easy to get a script when you're away from the US. All this to say that this is either (very) amateur hour or there's more to this story.
Good to hear that she has gotten a handle on what was wrong with her. This is a woman who has three Olympic gold medals (two relays and a long jump) and a fourth place finish in the 100m in 10.85!, three World Championship golds in the long jump, two World Indoor bronze medals in the 60m, and a World Indoor gold in the long jump. Great that she was saved and is responding very well to the iron supplementation. Many people outside athletics have hypothyroidism and respond well to medication for it.
