Why would you respond at all to girls telling me "nice haircut"?
Same thing I say when a girl compliments my stride, I nod my head yes and smile at them. I might also say hi.

What you say after receiving a compliment is "thank you."
If someone compliments you after a lousy race, you don't explain how you could have done much better; you say "thank you."
If a girl compliments your haircut (even if you're not very happy with it), you say "thank you."
Also, she wants you, Big Guy.

First thing you say..."thank you, I am (whatever your name is, example in your case Dorkus Maximus, since obviously you didn't knew what to do) nice to meet you..." There you open the door for her to give you her name and open up for a conversation. But it's too late for that, you missed on that opportunity Dorkus. Good luck next time!
The best answer to a silly question:
It depends on your intentions.
If this is someone who might be interested in you but that you have no interest, give a polite "thanks" and maybe a follow comment so as not to be too abrupt like "just got it cut" or "it's a little different"
If this is someone you might like romantically you say something that shows you really value the comment and you use it as a springboard to further talk, "well thank you, do you really think so? Because I wasn't sure about it". (This encourages her to follow up with more compliments to reassure you that it's good)
So.....we need pictures.............no, no not of the haircut of the girl stupid!

Say most anything, just as long as it isn't totally self-centered and self-absorbed. It's all a vehicle to see if she feels comfortable with you. Try too hard and you just make a pain of yourself. Be interested and leave your remarks open for furthering the discussion. Show you notice subtle things and are engaged.
For example, you could say 'thanks, I get it cut at ______. I just started going there.'
You also have to realize that sometimes they pick you out just because you look like someone they'd like to mess with, becuase their bored, because it would be fun. I mean, they could be spoofing on you. Which isn't any big deal, either. But if you suspect this is the case, game on, say something straight off like 'Nice shoes."
