Sorry for the delay, I’ve never written it out before. Probably it’s pretty standard stuff really. Haven’t compared to other recipes recently, but maybe I just got better at the execution details than the recipe really being strongly different.
It’s best if you have a stand mixer for this…like a KitchenAid or similar especially for the sugar/butter step
1. Preheat oven to 375°F
2. Beat together 1 cup softened unsalted butter (~15 seconds in my microwave if you didn’t set it on the counter a couple hours ago), 1 cup dark brown sugar, and 0.5 cup white sugar until it’s a nice smooth creamy mixture
3. Add 2 eggs and 2 tsp of vanilla extract. Stir this until combined but don’t beat it too hard…we’re not making a meringue here.
4. In a separate bowl sift together 1.5 cups all purpose flour, 1.5-2tsp cinnamon (depending on how much you like cinnamon…if my wife had her way it’d be 3tsp cinnamon), 1 tsp baking powder, 1 tsp baking soda, and a pinch of salt. You can probably get by without sifting, but you should at least whisk together the ingredients in this step separately to make sure they’re blended instead of dumping them separately straight into your wet ingredients like a heathen.
5. Add the stuff from step 4. to the bowl from step 3. and stir until smooth but not too much (should still be thick)
6. Add 3 cups old fashioned oats gradually (1 cup at a time) till that’s all mixed together nice and good.
7. Add 12oz dark chocolate chips and stir till well blended.
8. Roll into little-medium size balls and put on cookie sheet for baking...don't flatten the balls before baking, they'll spread a bit on they're own but they do stay pretty plump which helps with chewiness I think.
9. Bake for 10 minutes.

Obviously this may not be your favorite cookie. Some people love their chocolate chip cookies to be sweet shocks. Some people prefer crunchy cookies instead of chewy ones. This is not that. It’s a little more balanced, especially with the oats and cinnamon and dark chocolate, and it’s chewy. Adjust to your liking. If you hate cinnamon take it out but I do suggest you try it at least once even if you’re usually indifferent to cinnamon like me. I’ve used quick cooking oats and they don’t quite end up with the same structure but it works fine and maybe provides a bit moist-er cookie if that’s your thing.
The universal truths that I still wouldn’t adjust if I were you are:
2tsp vanilla is always better than the 1tsp any cookie recipe ever suggests. Don’t you dare put your eggs in with the butter before you cream it with the sugar unless you want grainy cookies. Dry ingredients get mixed separately from wet ingredients for a reason.
